Easy Baked Lemon Garlic Dijon Salmon Recipe

If you are looking for an easy weeknight dinner that is both healthy and flavorful, but still super simple then this easy salmon recipe is it. My mom used to make a variation of this when I was growing up. With only a handful of ingredients, this salmon is so simple to make and super delicious! It is also easy to switch up the flavor profile by adding additional ingredients. For added freshness I like to add either parsley or cilantro to the sauce if I have some on hand. This method will leave the salmon flaky and perfectly cooked.

The best part about this recipe is that it is just as simple to make whether you are cooking for 1 or entertaining with a larger group and it comes out perfect every single time. This is a recipe that I make various times a month because it is such an easy salmon recipe that everyone loves.

Serves 4 

Ingredients

  • 1 – 1.5 lb of salmon filet (I prefer wild-caught)

  • 2 Tbsp of Cindy’s Kitchen Barcelona vinaigrette 

  • 2 tsp of garlic paste

  • 1 tsp dijon mustard

  • ¼ tsp Trader Joe’s onion salt

  • A couple cracks of fresh black pepper

  • Juice from half a large lemon (approx. 1 tbsp)

  • Lemon slices from the leftover half lemon

Ingredient Notes

  • Cindy’s Kitchen is a bit of a splurge when it comes to salad dressing but I promise it is worth it! The Barcelona dressing is my absolute favorite. Another alternative I like to use is Newman’s Own Olive Oil and Vinegar which is actually what my mom always used.

  • I used garlic paste as a shortcut. The price is higher but for me the convenience and not having garlicky hands is worth it. If you are using a head of garlic then use 2-3 medium cloves.

  • My preferred dijon mustard is Grey Poupon

  • If you don’t have a Trader Joe’s near you any onion salt will do. I do recommend trying the Trader Joe’s blend if you haven’t. I put it on so many things!

Salmon Cooking Instructions

  1. Preheat the oven to 450 degrees.

  2. Place foil onto a baking sheet (this makes for super easy clean up)!

  3. Combine all the ingredients in a bowl for the sauce. 

  4. Place salmon on the baking sheet skin side down. Next, add the sauce to the top of the salmon and place a slice of lemon on each piece of salmon.

  5. Place the salmon into the preheated oven for 12 minutes. Continue to check the salmon as it may need a few extra minutes if it is thicker.

  6. Finally, remove the salmon from the oven and serve. 

There are various ways to serve this. I personally love to eat this with asparagus or broccoli as my green veggie and then rice or mashed potatoes as my carb. Also, this is delicious over a salad or even some lemon butter pasta.

P.S. This sauce is great on any seafood! I really love cooking shrimp with this flavor profile.
